{"id":869,"date":"2014-04-04T08:07:21","date_gmt":"2014-04-04T13:07:21","guid":{"rendered":"http:\/\/www.nealbreeding.com\/blogs\/?p=869"},"modified":"2014-04-04T08:07:21","modified_gmt":"2014-04-04T13:07:21","slug":"homemade-cheese-crackers","status":"publish","type":"post","link":"http:\/\/www.nealbreeding.com\/blogs\/homemade-cheese-crackers\/","title":{"rendered":"Homemade Cheese Crackers"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-870\" alt=\"487441_491893514243464_936734263_n\" src=\"http:\/\/www.nealbreeding.com\/blogs\/wp-content\/uploads\/2014\/04\/487441_491893514243464_936734263_n-225x300.jpg\" width=\"225\" height=\"300\" srcset=\"http:\/\/www.nealbreeding.com\/blogs\/wp-content\/uploads\/2014\/04\/487441_491893514243464_936734263_n-225x300.jpg 225w, http:\/\/www.nealbreeding.com\/blogs\/wp-content\/uploads\/2014\/04\/487441_491893514243464_936734263_n-450x600.jpg 450w, http:\/\/www.nealbreeding.com\/blogs\/wp-content\/uploads\/2014\/04\/487441_491893514243464_936734263_n.jpg 720w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<ul>\n<li>6 ounces Sharp Cheddar Cheese, shredded (we used 2% Kraft Sharp Cheddar)<\/li>\n<li>1\/4 cup butter, cold and cut into cubes (I think cold butter makes the dough easier to work<\/li>\n<li>3\/4 cup all purpose flour (plus a little more for dusting, could use 1\/2 whole wheat, 1\/2 AP)<\/li>\n<li>1\/2 teaspoon\u00a0kosher (or\u00a0coarse)\u00a0<span style=\"color: #333333; font-style: normal; line-height: 24.375px;\">salt\u00a0<\/span><\/li>\n<li>1\/2 teaspoon crushed red pepper flakes (use less if you want less of a kick)<\/li>\n<li>1 tablespoon milk (we used 2% milk)<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ol>\n<li>\u00a0Preheat oven to 350\u00b0 &#8212; we cooked ours on a <a href=\"http:\/\/www.amazon.com\/gp\/product\/B00008T960\/ref=as_li_ss_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00008T960&amp;linkCode=as2&amp;tag=nebl-20\" target=\"_blank\">silicone mat<\/a>, if you don&#8217;t have one, you should get one! Alternatively, Grease baking sheet, or line with parchment paper.<\/li>\n<li>Place first 5 ingredients in food processor, and pulse until it turns into coarse crumbs.<\/li>\n<li>Add milk and process until dough forms. We ended up using another 1\/2 teaspoon. You want enough milk to make the ingredients into dough (not dry crumbs)<\/li>\n<li>Using your hands form dough into a ball, then flatten on floured work surface.<\/li>\n<li>Roll out dough to 1\/8&#8243; thick. Try to roll into rectangle as best as you can.<\/li>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-871\" alt=\"10154129_491893504243465_974278418_n\" src=\"http:\/\/www.nealbreeding.com\/blogs\/wp-content\/uploads\/2014\/04\/10154129_491893504243465_974278418_n-278x300.jpg\" width=\"278\" height=\"300\" srcset=\"http:\/\/www.nealbreeding.com\/blogs\/wp-content\/uploads\/2014\/04\/10154129_491893504243465_974278418_n-278x300.jpg 278w, http:\/\/www.nealbreeding.com\/blogs\/wp-content\/uploads\/2014\/04\/10154129_491893504243465_974278418_n-500x538.jpg 500w, http:\/\/www.nealbreeding.com\/blogs\/wp-content\/uploads\/2014\/04\/10154129_491893504243465_974278418_n.jpg 892w\" sizes=\"auto, (max-width: 278px) 100vw, 278px\" \/>We used a pizza cutter, cut dough into one inch squares. Use a wooden chopstick to poke a hole in the center of each cracker<\/li>\n<li>Then we transfer crackers to the baking sheet using a pastry cutter (spatula would be fine). You can place them fairly close together, they will puff up, but not spread much, but do not double stack them.<\/li>\n<li>Bake for 12-15 minutes, until edges start to brown. Do not over cook.<\/li>\n<li>We let them cool in a colander\u00a0resting on a wire rack to allow the air to circulate.<br \/>\n<strong>Side note:<\/strong> We have a convection oven and cooked about 12 to 13 minutes.<\/li>\n<li>Enjoy when cool.
